Overview

Anhydrous sodium pyrophosphate is a colorless, transparent crystal or white powder. It has a relative density of 1.824 and a melting point of 880℃. It is soluble in water but insoluble in alcohol; its aqueous solution is alkaline, easily effloresces, and is hygroscopic. It has strong pH buffering capacity and a certain chelating effect on metal ions. Anhydrous sodium pyrophosphate is mainly used as a water softener, a bleaching auxiliary in printing and dyeing, a wool degreasing agent, a boiler descaling agent, a metal ion chelating agent, a dispersant, and an auxiliary agent in the fine bleaching of printing, dyeing, and straw products. It is also an additive in synthetic detergents, a conditioner for oil well mud, and an auxiliary agent in the production of ABS resin. It is used as a copper complexing agent in electroplating solutions. Sodium pyrophosphate decahydrate is mainly used as a toothpaste stabilizer. In the food industry, it is used as an emulsifier, buffer, chelating agent, gelling agent, and stabilizer. Sodium pyrophosphate reacts with Ag+ to form white silver pyrophosphate, while orthophosphate reacts with Ag+ to form a yellow silver orthophosphate precipitate; this is a characteristic reaction that distinguishes the two salts. Sodium pyrophosphate, suitable for consumption, possesses properties such as adhesion to metal particles, dispersing effect, anti-flocculation, emulsifying effect, prevention of lipid oxidation, and casein thickening effect. At high pH values, it inhibits food spoilage.

Basic Functions

Sodium pyrophosphate exhibits the general characteristics of polyphosphates, including emulsifying, dispersing, prevention of lipid oxidation, and improved protein binding properties.

Solubility of Anhydrous Sodium Pyrophosphate in Water (100g water): 0℃ -3.16g; 10℃ -3.95g; 20℃ -6.23g; 30℃ -9.95g; 40℃ -13.5g; 50℃ -17.45g; 60℃ -21.83g; 80℃ -30.04g; 100℃ -40.26g

Chemical Properties

White crystalline powder. Easily soluble in water; at 20℃, the solubility in 100g of water is 6.23g, and its aqueous solution is alkaline; insoluble in alcohol.

Uses

Used as a finishing agent in printing and dyeing, a water softener, etc.; used as a copper complexing agent in electroplating solutions; used as a rust remover in machining; formulated with sodium hydrosulfite as a bleaching agent and wool degreasing agent; used as an auxiliary agent in the bleaching, printing, and finishing of plant fibers; used as a detergent builder in synthetic detergents; added to an appropriate amount of sodium pyrophosphate in the production of dicalcium phosphate for toothpaste to form a colloid and provide stability; used as a dispersant and emulsifier in chemical production; used as a water softener and boiler descaling agent in water treatment; a raw material for the production of other pyrophosphates.

Uses

Used in canned goods, fruit juice beverages, dairy products, soy milk, etc., as a quality improver. Usually used in formulations with other condensed phosphates. Uses: As a quality improver, it enhances the complexation of metal ions, pH value, and ionic strength in food, thereby improving the binding force and water-holding capacity of food. In my country, it is permitted for use in dairy products, poultry and fish products, meat products, ice cream, and instant noodles, with a maximum usage of 5.0 g/kg; in canned goods, fruit juice (flavored) beverages, and plant protein beverages, the maximum usage is 1.0 g/kg. As a whitening agent in compound potato starch products, the maximum usage is 0.025 g/kg.

Electroplating industry: Used in the preparation of electroplating solutions, forming complexes with iron. Wool textile industry: Used as a wool degreasing and bleaching agent. Paper industry: Used for bleaching paper and plant fibers. Printing and dyeing industry: Used as an auxiliary agent in printing, dyeing, and fine bleaching. Daily chemical industry: Used as a toothpaste additive, forming a colloid with dicalcium phosphate and acting as a stabilizer; also used in the synthesis of detergents and the production of shampoos. Water treatment: Used as a water softener. Machining: Used as a rust remover. Chemical production: Used as a dispersant and emulsifier. It can also be used in water treatment agents, oil drilling, and in the food industry as a quality improver, emulsifier, buffer, and chelating agent. Applications include water softener, rust remover, metal electrolytic analysis, dispersant, and emulsifier.
